3 c nuts & seeds (I used almonds, pecans & sunflower seeds)
1 c coconut flakes (unsweetened)
1/2 c honey
1/4 c olive oil (to coat the granola)
3 tbs unsalted butter
1 tsp salt
1/2 tsp cinnamon
Preheat oven to 300 degrees. Mix first 3 ingredients in a separate bowl. Heat honey, olive oil, butter, salt and cinnamon until butter melts. Pour liquid over dry ingredients and mix evenly.
Pour mixture onto a cookie sheet with edges. Trust me…it needs to have edges.
Bake for 45 minutes, stirring every 15 minutes.
This makes the perfect snack or addition to yogurt! For bigger clusters, stir less throughout the bake time. You can add cacao nibs for an added chocolate taste, or dried fruit for the sweet and sour punch. Enjoy!
